Yes, if you want the best results possible. Doing so helps create awareness around how much food your body needs. The good news is is that once you get the hang of it it becomes second nature and eventually you'll be able to eyeball how much food you need.
No, not if you're responsible. If you have an upcoming event where there's lots of food and drinks you can plan accordingly and reduce some calories from meals before and after the event to level out. If you find you have a slip up just leave it in the past and get back to business.
